I was more than pleased with the Rockwoods performance in the mini and on the pork. On a scale of 1-10 it easily earned a 9 for this cook.

@SGH Don't know if anyone has already mentioned that you can take the temp probe retainer off from the inside of the dome, pull the temp probe out and just put the retainer on the probe direct. Then just drop it back in.

That way you get more clearance inside the Mini. And you can easily remove the probe before a cook that has some height. Others have said they used a wine cork.

Me I am simple guy, I just figured I rather use the retainer.

Thanks for the tip my friend. For today's cook I totally removed the thermometer and am using my Thermopen to check the egg temp. Again thank you.

@SGH Yes sir, you,re welcome. I have had my mini for about a year it has become our go to Egg. Most because we usually are cooking for two. It fast to temp and easy to cleanup for the next cook.

Yep that will work. Nice work on those ribs. I like ribs and this will be my next try on them. One rack should work for us.

The little mini has absolutely won me over. I like it so much that I'm getting one for myself. The one in the pic is my wife's. They are awesome little cookers. The small amount of lump that they use is amazing.

@SGH yes sir. I do that on both my large and mini. When I use my stoker I drop one of the stoker fire probes in the dome hole and one at the grid.

Nice job on the ribs. I've cooked some on my mini before but indirect. Can't say I'd even think to try that cook direct with the ribs so close to the lump. Kudos to you for pulling that off!

Thanks for the kind words and for posting the link. How I was able to pull it off direct was I lit the lump at the bottom instead of at the top. When I got the temp stabilized I dug in the bag and found some very large pieces of lump and set them on top of the pile. In a sense I was using large pieces of lump to create a make shift indirect set up. It worked well for a while but eventually it started to burn away. At this point to compensate I merely reduced the egg temp from 325 to 265. This worked like a charm. Just a note. I did another rack today just as a test but this time I ran 265 for the entire cook. This seems at least to me to be the sweet spot for doing ribs direct on the mini. The 265 setting performed flawlessly. It's really quite easy. You should give it a try some time. Again thanks for the kind words and the link my friend.

  • @SGH‌ I always light from the top with my looftlighter. How does one go about lighting from the bottom, and does the method vary from between the bigger and smaller eggs?

One last tip. Due to the renderings dripping on the coals I was getting a massive amount of smoke that concerned me. To help prevent a acrid taste from forming I opened the daisy wheel up and almost completely closed the bottom vent. I feel that this worked well as I was able to still control the temp and the ribs turned out excellent with no bitter or acrid taste at all.

On my large I always light from the top as well. The only reason that I lit from the bottom on the mini was I was trying to use the large pieces of lump above as a make shift indirect barrier. It actually worked quite well over all. I lit from the bottom by breaking a Rutland paraffin cube into small pieces and set them on the lump grate. I then covered them with a small amount of lump. I then reached in through the bottom vent with a propane grill lighter and lit the paraffin cube. Once I got the egg stabilized I then set large pieces of lump on top of the pile to farther enhance the indirect affect. It surprisingly worked very well. I hope this helps to clarify my friend.
