  • Good looking cook there! Pretty cool that it was all by using the force. Did you use thermapen to temp the brisket? Never tried, but would the thermapen fit through the dome thermostat hole?

    No, outside of the the SRF brisket, I've done my last 9 or 10 by feel. The thermapen does fit through the hole.

    I want to order one of those extra large thermostats. I'd rather pay less for no BGE branding though. Anyone have info on the big one? @SMITTYtheSMOKER‌ ?

    I feel your pain. I'm in the same boat. The point gets eaten first and then whatever remains of the flat gets frozen. Multiple frozen flats floating around in the freezer now. My favorite thing to make with it is homemade brisket spaghetti sauce. Pretty simple to make but oh so good.

    Yeah...we had a lot left over but we usually eat on it for the week.  Cali, I have noticed that the premium grades do have a smaller point.  It's still plenty enough though.  

    I might back down my briskets to one a month.  I'd like prime to get back into the mid $3 per # range.

    Yep, if you back off to once a month, that will certainly ease up demand on brisket supply. We would appreciate that.  :D

    I would show up. My last 2 have SUCKED. I'm starting to think I need an intervention. I'm only doing one every 2-3 months these days and it shows. Last one I cooked perfectly but it had no smoke on it at all. I loaded up with oak but it just didn't take. Tasted like a big ol jiggly roast. This happens every 4-5 and has since I got my egg. I've thought about getting an offset because of it but I don't cook enough Q anymore to justify it. Wifey doesn't like them, kids and I are ambivalent. I made so many for 5-6 years straight I just kind of lost my appetite for them. We nibble on the point and freeze or give away the rest.

    My last 3 have been less than stellar. I'm trying to figure out where I've gone wrong. I don't want to wait until Salado to get in front of someone I can pepper with questions. And I don't want to buy any more accessories until I know it will work. Seeing those pics this morning made me realize I have a long way to go. I could start using the Travis Method. But I want to get this right first.

    @cazzy-the force is with you now.  Retained a lot of knowledge from your stops in Austin.  Great result and pics.
