Ribeyes, New York Strip and Lamb Chops. Slow smoked over water.

Going to slow smoke some Ribeyes, New York Strip and Lamp over water at 150 degrees for a few hours then sear on the egg. I already know that 150 is suppose to be a dangerously low temp but I'm very old so don't worry. Something else will kill me long before breaking the bbq rules will. Just a simple salting then a few hours in the oak smoke before the final sear. Will post pics as the cook pans out. As always I hope you enjoy. Disclaimer: You should not cook at 150 degrees. You should always cook at 200 or preferably higher for safety reasons. ;)

    I do my steaks in the Sous Vide at 128 all the time. I think the amount of time comes into play as far as safety is involved. So the Egg's role is sear only?

    Yes sir. The egg will only be used for a short 60 second sear. I will let them dwell in the smoke at 150 degrees over water until the internal hits 115-120. Then I will pull and sear each side for 30 seconds at 800 degrees give or take a little. It's not unsafe my friend. Not at all. But all the experts and pros say it is so I tell people not to follow what they see me do. One should always follow the experts advice so they don't go wrong.

    I always cook my veggies separate from meat on Kabobs.   Different foods cook differently.  Anyway, off topic because of the firewater.  Good job so far SGH.  I'll check back on this later.

  • You cracked me up with the being old joke so much I couldn't stop laughing for some time. I am old too and nobody gets out alive so why not try some things that are considered "on the edge". Bull riding is out so why not. My wife of 37 years and myself love a good steak so I am going to experiment with this. Thanks for the post.
