Margherita Chicken Breasts

Marinated some chicken breasts in a Margherita mix. Stuffed them with buffalo mozzarella, chopped jalepenos and cilantro.
Raised, indirect at 400, pulled at 165. Went with corn and pepper relish, watermelon, tomato and strawberry salsa, mashed tears (just coz) and sautéed mushrooms. Made a sweet and sour glaze by reducing some Margherita mix with honey till it was syrupy. Don't know if I've got room for the peach tart (done in the big clock). Too many Margheritas?

    @nolaegghead‌ - try Costco. They carry an Italian one that's pretty damn good for the price. Not burrata, but makes a great caprese salad among other things. Great on pizza margherita as well.

    To be honest, it doesn't do much for chicken breasts but I thought I'd give it a whirl. I think chic breasts are hard to marinate - they're fairly dense. Personally I like 'em skin on and bone in. 'Er indoors bought these - happy wife - happy life…….

    Got to keep the wife happy. No doubt about that. I like to give chicken breast a simple brine. It works wonders my friend. Hard to beat in my opinion. Brine and then rub with seasoning of choice.

  • I made Margherita Chicken Skewers last year at the Owosso Farmers Market. I thought they were darn tasty. The chicken was already cut into skewer size so the marinade really got to work on them. Did you include the tequila?

    That sounds effing awesome! The salsa sounds interesting. How was the flavor contrast? And the margaritas...good call man! Try this Margarita on for size (it's my fav).

    I drank the Tequila and was so full I fell asleep in front of the telly. :)
    @NPHuskerFL.. I rode my Harley from San Diego to Cabo and that's where I first tried Grand Marnier in a Margherita. Now it's SOP

    44 years at Toyota got the gas out. Going fine, wished I had done this several years ago. Thanks for asking.
