Like @double_ds mentioned tacos (carnitas) are really good. I loosely followed this recipe:Basically I reheated the pork in the liquid mixture, then heat it in a skillet to brown it and add some additional dry seasonings (cumin, cayenne, etc). it was really good and frying the pork in a skillet gives it a nice bacon-like texture on the outside.fence0407 said:I make nachos with mine. Usually just fajitas/soft tacos or whatever you want to call them. Put on a tortilla and heat up and add cheese, sour cream, BBQ sauce, hot sauce, jalepenos, or anything else you want to add. Makes for some good easy lunch for a few days anyway.

A nice classic Pulled Pork Sammy with SC mustard based BBQ sauce
Deep Dish BBQ Pizza
Low Carb Zucchini Boats (these were made with Pulled Beef, but you get the idea)
Grilled Quesadillas
Pulled Pork BBQ Cornbread
This one was made with pulled beef, but it's good with pulled pork too.
And my wife's favorite...Pulled Pork Egg Rolls dipped in SC mustard based BBQ sauce

I usually do pork tacos/burritos. I tried lettuce wraps with them last time--they were pretty good, but nothing special.
