    Franklin's Barbecue's point was good, but only a 9 out of 10 IMO.  It was very good, but i've made better tasting point at home.  His flat brisket was bananas and I actually preferred the texture better than the point.  Make sure to get some flat as I would love to hear your opinion.

    Also, let me know if you see my picture hanging on the wall.  I doubt he's hung it up yet but I could be wrong.

    Spring Hen, IrishRog and myself (Spring Chicken) will show up there about 9:00'ish Friday morning.  We hope to meet him.  I've written an email to him and he replied that he should be there unless a catering job comes along.

    We didn't think about it in time but we would have liked to have brought a whole brisket up to the Meet & Greet.  He was sold out long ago.  All he has is what he cooks that day.

    The man is a legend.  That's for sure.

    We'll look for your picture, which is way cool.  You did good.

    There is still room in our next Competitive BBQ Class held in Hammond, LA held on May 2nd & 3rd of 2014. If you are interested, message me with your mailing address and email…I will get you the registration form.

    In the class I cover chicken, ribs, pork, and brisket as if it were an actual KCBS Competition. I will give you my recipes and a bottle of every rub and sauce I use. I will show you how I trim, season and cook the meats just like I would do at a competition. Trish will also show you how to build the turn in boxes.

    I will provide everything you need for the class… you will not need to bring anything.

    As an added bonus, you will get fed pretty well throughout the class. We will have some great Cajun food for dinner Friday night and breakfast Saturday morning. On Saturday we will sample the competition meats that we cooked.

    The class starts Friday at 6pm and goes to around 10pm. On Saturday it starts at 7am and goes to around 2pm. The class is $700 for the head cook ($500 for spouses)

    If you need a room reservation, I suggest the Hammond Hampton Inn.

    I saw that post too!  His classes are expensive, but I hear everyone enjoys their time with a legend.  

    I did get a deal...I know that the information I learned from John Lewis is invaluable.  Definitely feel very fortunate for my two recent Austin visits.  I even asked my wife "am I really this lucky".  lol

  • Cazzy- bring a freaking brisket.....(better bring 3 or 4, they go in 5 minutes or less).

    I'm not planning on cooking but I may do a brisket overnight and bring for the afterparty. I have a CyberQ wifi now so I don't have to call and yell at my son from a concert to check on the temps. Kind of sad really.
