The 'xperiment

Jalapeño poppers, a quintessential fest food, easy to cook, easy to eat, and very tasty, ....But...they are PIA to prepare in quantity.

We re-arranged the ingredients and I think we have come up with an popper alternate cook.

Egged/roasted 1 jalapeño , 1 poblano. While the peppers were on the egg , made a bacon lattice. That went on the egg to cook, followed by 3 corn tortillas to soften.

We made a cream cheese mixture using the roasted pepper, couple of sprinkles of rub and some dried herbs.

The cheese mixture was spread over the bacon lattice which was placed on two tortillas and topped with the other. Back on the egg to crisp up the bottom tortilla and to melt the cheese.

Very good and tasty. Thinking this might be a easily morhp into a "popper lasagne" with layers of popper cream and cheese and rajas in creamed corn using the bacon lattice as the pasta. Stay tuned the fest imagination juices are flowing.
