88 degrees, or 188? 88 after 12 hours seems low.They/Them

It was 88. I checked the thermometer last night in boiling water and it was a tad off. Boiling water was reading like 205.
I've been running at 250-260 dome.Huntsville, Al LBGE -

It must have been 188. I think my digit is going out. Or I'm just completely retarded. I'm now at 192. Sorry for the confusion.Huntsville, Al LBGE

That makes more sense, if it was at 88* I would be concerned it spent too long in the danger zone.Central_Bama_Egger said:It must have been 188. I think my digit is going out. Or I'm just completely retarded. I'm now at 192. Sorry for the confusion.

@dmw I appreciate your help here. How long will one hold in FTC. Now I'm concerned about it being done too soon.Huntsville, Al LBGE

I have gone 6 hours, others have gone longer. Lower you temp a bit to slow things down if you need. Be sure you are checking temp in the thickest part of the flat. And then cook to tenderness, not a specific temp. On the FTC if I'm going longer I preheat the cooler for an hour or so with hot water as well.They/Them

All done with the brisket!! From 6pm last night to 2pm today. Roughly 250 dome temp. Stuck it in the cooler. Seemed to have a large clump of fat still on ot between the point and flat. I guess it can be cut out. Maybe it'll be good.Huntsville, Al LBGE
