So for my second rib smoke I went with the 321 method.

All I can say is wow! I sauced a couple for my wife and I and left the kids plain (8, 6, 4, and 1.75). Put the sauce on for the last 30 min. Just FOBT, with nice crust and great gentle smoke. I used applewood.

Not a huge smoke ring, but still great.

I used a coat of yellow mustard and a simple rub. Very pleased!!!
