brisket success
Great flat and point. Great bark and smoke ring. Rubbed with S&P, garlic powder, onion powder and a bit of cayenne.
Patience paid off here because it became way more tender letting it ride for another hour after I thought about pulling it.

Yeah, the 10 pound packer I cooked Friday night and posted on another thread cost me $25.50.... so that's uh, er, 3.6 PBRs per pound (for @henapple)

Brisket must be high margin for the big box chains-here the the land of KY Jelly (a whole 'nother eggsperience) flats (about all you can find) have been running around $6/# since August. Since I have to get the fix at least monthly I am resigned to the $$. And it really sucks when you turn out a single or less-but sometimes you do get the triple or home-run then it's waaaay worth it.
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Best part was when I checked it a half hour or so before I pulled it, there were little pools of rendered fat floating on the top. I knew it was going to be good.
