Miso Glazed Pheasant

I was looking for a new pheasant recipe and ended up adapting a quail recipe from The Japanese Grill. Cooked raised direct at around 375 dome, basting twice more during the cook. I also cooked yaki onigiri (grilled rice balls), which my wide loves. Sorry for the lousy plated photos, I was holding a baby in one arm and that's all I could manage.

    Quail and pheasant must be similar, used to hunt ring necks in eastern Ontario years ago, my "wide" made me cook them outside, said I was mean.

    Nice cook. Have you tried that miso glaze on other meats? Sounds tasty.

    Did you get your miso at Asahi Grocery on Burnet?  That is the best stocked Japanese grocery I have ever seen.  Much better than Daido in Houston.  Did you use sansho as called for in the recipe?  I have not used that and am curious if it adds a (good) taste to the bird.  Japanese Grill is a great book, eh?  If you like it, also look into Asian Sauces and Marinades.  Another great one.

    @Village Idiot - I went to MT market on Lamar, have you been there? It's pretty big but I don't have much to compare to.

    I haven't found the sansho yet.

    Thanks for the book suggestion, I'll add that to my wish list. I've been enjoying TJG and look forward to trying some additional recipes. Which have been your favorite?

    To be honest, I was not impressed with the MT Market on Lamar.  It seemed disorganized and not extremely clean.  I have been spoiled with Ranch 99 Market (I-10 @ Blalock Rd. in Houston).  That place is so clean you can eat off the floor.  I've bought their meat without any qualms.  And, their selection of all Asian products is amazing.  Note: they are not heavy on Japanese items.  Like I said above, for Japanese items, Asahi Grocery is certainly worth the trip (Hwy 2222 @ Burnet).  Very well stocked.  I just bought kelp and dried bonita flakes to make dashi.

    I haven't tried many recipes in the Japanese Grill Book because many of them use the two zone method on grilling meat.  I just bought a large Weber just for that technique.  I did do Porterhouse with Garlic-Soy Sauce Marinate (p. 106) and it was excellent. I also made Garlic Yuzu-Kosho Shrimp (p. 78) and it was also excellent.  I have the Gyu Dare Dipping Sauce and Marinade in the fridge (p. 104) and I've used it for dipping sauce on several things.  Again, another winner.

    Right now, I'm into the Asian Sauces book.

    So many great recipes ..... so little time.

    @village idiot - I will make a point of visiting Asahi, thanks for the tip. I feel your pain: love food, too little tmne for cooking...pretty much just weekends.
