These are the other meats that went along with the 44lbs of Pork Butts that was served for lunch today
The Chicken was cook on my Soul Bucket.....this picture shows the Chicken stacked on one end, coals on the other end....I start the Chicken direct over Mesquite, when they get the color I want, I then separate the Chicken from the coals, add cherry chips and smoke about 1 hour. The Links slow cooked on the Egg about 2 hours

Are those the Evergood Louisiana Hot Links? Just discovered these this past summer at my local (it is in another country) Bellingham Costco - great sausage. Looks pretty fine..Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

I get the Hot Links from Taylor's Sausage in Oaklfand CA....when I used to do a lot of Qing on some of the big rigs I used to have, they would make the links into 6' ropes.......this allowed the juices to flow back and forth throughout the rope and not getting too hot and splitting and losing the juices.......I have been buying from Taylor's more than 30 years.......check out this Yelp link, lots of good pictures http://www.yelp.com/biz/taylors-sausage-oakland I have had the Evergood Links and they are vey good but Taylor's is my go to place.

When I cook indirect , I use a pizza pan covered with foil to put on top of the platesetter
