Grilled Romaine lettuce is not uncommon but it always gets a great reaction from folks who never had it off an egg before. Also is is simple and fast.

Forget creative, what will be very popular. ABTs, wings, meatballs, sausage, meat on a stick. I bet grilled pineapple would make an impression.

We did smores sandwiches at egging in the mountains. White bread buttered then nutella and marshmellows with crushed graham crackers inside. Grilled directly on the grate. They're good.

something simple for a lot of people would be small german pretzel sticks. traditional with salt, caraway seeds and salt, cheddar pretzel sticks, maple syrup and walnut pretzels etc

Scotch Eggs. Serving a breakfast dish might be just the right kind of curveball to stand out. Plus, these things are pretty easy, and ridiculously good. Night before prep, and about an hour cook time in the AM.

I'd cook at a little higher temperature than 275...maybe 325 or so. Sausage options are pretty wide open. I tried sweet italian ground sausage and it was good, but I think next time I'll opt for a sage flavor, or maybe maple.

We fried donuts in a cast iron dutch oven. I have also seen fried moon pies.
Large, medium, small and a mini. Egg'n, golfing, beer drinking, camping and following football and baseball.

I'm not much of a fish person, but I sometimes make salmon fillets with lemon, dill and Johnny's Seafood Seasoning; then you completely cover them with sour cream! The sour cream keeps the salmon nice and moist and the smoke picks up this AMAZING smoky flavor. (It turns a little brown and looks like meringue.)I mentioned this a few years ago and I just found the thread:(You could also grill up some angel food cake for strawberry shortcake. It's awesome.)

Impossible Chorizo Pie, Buttermilk pie, Tater Tot Breakfast Casserole, Bourbon Cranberry Ham, Stuffed Pork Loin.If this is your first fest pace yourself. Do one less dish than you plan and do at least one meal that requires about an hour to cook....that way you can go mingle and taste what other eggers are cooking.Large, small and mini now Egging in Rowlett Tx

I was browsing through APL's "Serious Barbeque" tonight, and a recipe jumped out at me: BBQ'd eggs. Boil 'em for 12 minutes, cool in ice water, roll to crack the shells (but don't remove), and them smoke on the Egg low (225) for 45 minutes.I haven't tried this (yet) but it sounds good, and would be fairly easy for your big crowd.___________

Can't find the link right now, but someone posted brownies cooked in oranges, they looked tremendous and support original. I know this is an older thread, did the eggfest already happen?
