I have numerous pans for deep dish, from CI, to Blue Steel, to Stoneware so never had to reuse a pan. I'd let it cool if I had to. I'd worry about putting the dough in a hot pan, as well as crust finishing way before toppings.__________________________________________It's not a science, it's an art.
