Why is it bad to have "leftover ribs"?
Then you couldnt make leftover rib pizza. Better than any pepperoni pizza.

Its usually just my wife and myself for most cooks. So purposely make sure I cook alot to amke sure I have leftovers. The egg is hot and cooking if I have 1 or 10 racks on it. Might as well get my lumps worth out of it.

I've used pulled pork (not much different from deboned leftover ribs) on otherwise "normal" pizza, and it's great. You can mix just about any leftover meat (even with BBQ sauce) on a tomato sauce pizza, and it's all good.

Have done a couple now. Posted a couple of weeks ago about my new thing of stripping the rib meat.
One thing to keep in mind. Stripped rib meat is dryer than pulled pork or brisket ( which are great pizzas).
Don't be to sparing on the sauce.
I do bbq sauce on the dough - as you would a tomato sauce, then meat, onions, and cheddar over the top. Dill pickles go on as a garnish after the cook.
Now, if you really want to take up a notch. paint the crust with a layer of Dijon mustard, prior to the BBQ sauce.
Just my thoughts.
