I got a whole leftover pork butt what to do?

I am goin to vacuseal some for a future meal but I have a whole cooked/unpulled pork butt.
Looking for ideas on what I can make with it. I know we can make tacos/enchiladas. But what else?

Pizza with PP, caramelized onions, and goat cheese is one of my favorite things to make with PP leftovers.
Also: ABTs, nachos, chili, beans, omelets, etc.

there is a popular fast casual mexican food place here that does a sweet pork, my wife loves it so usually we make some with each pulled pork leftovers. its pretty simple recipe of 1 can coke, 1 16 ounce jar of salsa (i like to use hot to counteract the sweet) and 3/4 cup brown sugar. mix all ingredients and bring to a boil, reduce heat to a slow simmer add pulled pork and let it reduce down for about 30 mins until you get a loose sauce around your pork. you can adjust the amounts more or less for the amount of pork you add. the above is perfect four about 2.5-3 pounds of cooked pp. its amazing stuff.

Another vote on the pulled pork pizza. Great way to use leftover pork. Pizza crust, bbq sauce, caramelized onions, bacon, mozzarella cheese. Then add more bbq sauce, pork, and cheese. Makes a man size pizza pie and it is the bomb!-Jody Newell (LBGE & a 36" Blackstone griddle).

I did this once as well. I took it to work the next day and made pulled pork breakfast burritos with scrambled eggs and cheese and bought some salsa verde from the local farmers market that is to die for... I put the PP in a crock pot, had the eggs in the the other, and heated the tortillas to order. Cheese melted in perfectly and I was a hero! It was over a year ago and I get asked weekly when I am doing it again. Just an idea.LBGEZionsville, IN

I truly believe that pulled/chopped pork that isn't overly seasoned one way or the other is the most versatile fully cooked meat around. You can work it into Mexican, Italian, Chinese, Japanese, etc. It can be used for a quick breakfast or a complicated dinner. It can be frozen and reheated, it can be eaten cold right out of the refrigerator. Really your imagination is your only limitation.
I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season. -

Omelets are delicious with pulled pork IMO. Also another good use is pulled pork in baked beans.
