Trying new Mavrick out. Had grill temp running around 250 to 280. Used some cherry and maple chips. By the way which is better to use chips or chunks ? Put on at 6 pm and wrapped at 4 am ran temp at 200 till 6am. Pulled at 6am and letting rest. Temp of meat was 205 when pulled. (Using also new Thermapen). Have a good day!! Also this is the stand i had made.

Nice looking butts! That stand is really cool.chips or chunks...that is heavily debated. In my non-scientific off the top of my head assessment, I would say if you took a vote most people would say that chunks burn longer. However, many argue that if you put in the same volume of chips than it doesn't matter. I can't make up my mind...so I use both . Also because I can usually only find apple or cherry in chip form. I mix some chips throughout my lump, then throw on a couple of chunks.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

PS: Might consider putting a couple of layers of foil on the probe wires inside the egg, reflects the heat off of them.

Thanks Charlie tuna, did not think of that. They were juicy and fell apart. Bones just fell out. Have to season and smoke a little more, but good as is.
