Ok, so called the local dealer of DP about if they had Raging River as that is what I use on the Spatch Chickens I make that everyone loves, no go. They are all out, of course I happen to be out as well. Crap. Any ideas on a rub that I can use that doesn't have much/any heat to it on spatch chickens?

Of course I am cooking 3-4 Spatch chickens this weekend for a party...hmmm...

Thanks,

JT

    S&P is very good.

or make what my wife wants used: (not hot )

Coffee Rub (turkey, chicken, beef & pork)
Equal part: Instant Expresso Ground coffee
    Equal part: Brown Sugar
    ½ part: Black Pepper
    ½ part: Kosher Salt
    ½ part: Garlic Powder
    ¾ part: Ancho Chili Powder
Don't worry on exact, just close on measurement. I used to use turbinado sugar but we like with brown better. This is pulled from MollyShark, Hungry Man, & Richard In Fl then tweaked. I find the ancho chili powder is far less expensive in the bulk spice area than the bottled area ( have used both light or dark version). I make it starting with a half cup Instant Expresso Ground coffee and work from there as it seems to store well if sealed.
Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I've found THIS RUB to be pretty tasty, and simple to throw together.

I really like the JohnHenry's rubs and their Texas Chicken Tickler is one of the best. Give that one a spin some time.

I buy the commercial size, i think it is 28 ounce container of "Lawry's Poultry Season And Rub" at Sam's Club for just over six bucks.  It is very mild, but good on chicken and turkey.

I really enjoy compound butter under the skin imparts flavor in every bite. Just set out butter until room temp add spices (I like thyme, rosemary, Adobo seasoning from Goya red top, and pepper)

Since we have to get ready for the party and I already have it I am going the tsunami spin route. Never used it before so we will see how it goes.

Putting a naked ham on the egg now as we pulled it from the deep freeze last weekend. See how it goes.

Also trying out my new BGE Maverick with wireless. Absolutely love this thing!!

Well folks, went with Tsunami Spin. It was pretty good, didn't like it as much as the Raging River, but still good. Crowd loved the chicken, people were really impressed. They also loved the nacho cheese dawgs we made, go figure.

Nacho cheese on a hot dog. Best of both worlds. Wrap it in bacon and I'd need some time alone.
