OK, started getting things unpacked now that we are just outside Houston,and SWMBO'd wants an egged brisket. Well who the heck am I to argue.
OK, this morning she picked up an 11 lber from Costco. Came home to find she had trimmed away all the hard fat, and even start applying rub. Now the rub is from SR's The Barbecue Bible (ok is it still Texas style, those who know better tell me). Anyway the rub consists of is salt, chile powder, sugar, ground black pepper, ground cumin.
While I wanted to do a show of solidarity, I had to go digging to find the mavericks, but I promise I won't peek at the dome.
Bx - > NJ ->TX!!!
All to get cheaper brisket!

And a pic of it all rubbed in the tray. Its currently in the fridge absorbing all that goodness.

Thanks all for the welcome been a long time coming. And a @hapster... I certainly hope so.The brisket should be ready about noon or so, (maverick says 185, but I hope I got it in right) then FTC for the rest of the family to get here.FWIW, the family and I will be at the eggfest next week. It's our first, so I'd really just like to feel it out.now.... Back to the brisket......OK, got a wake-up beep about 4am, the temp dropped below 210, got up, opened the daisy wheel so that the smaller openings were wide open.since then temp has risen, and stayed stable at about 225 - 230 since then.Pics coming up.Bx - > NJ ->TX!!!All to get cheaper brisket!

Can't keep the little savage hands out of there until I wrap it.
10 lbs trimmed, about 12 hours total cook time at 225 average at the grate.
