Just got my Amaze N Smoker in the mail & am wondering from those of you that have it if you leave the DFMT wide open when smoking or do you just crack it open. I can't wait to try this thing out on some almonds & salmon. Thanks.

Not to get technical, but according to chemistry alcohol is a solution...

Take it off, bottom vent completely open, sitting on grate (I remove all charcoal and ash prior to use) you want as much air as possible to keep that sucker going. Watch your dome temp if it rises you can do a pan of ice on a ps or stone to help keep it down. Especially on salmon, bacon cheese you don't want it getting much over 70 degrees

Yep, no daisy wheel on and bottom vent wide open.... clean egg, AMS on charcoal grate, food being smoked on cooking grate.... heat the pellets and AMS in an over for 30 minutes before you light it and put it in the egg-- it will not go out this way... First few times I used mine it went out a lot using the pellets.
