Help. Vegetarians commin over!
New fire mission. We are expecting vegetarian only families over tonight and they have been informed of the "egg" and I have been given the task of egging.
Not into veggie only food and don't know what to do. I know, I have checked online and there are elaborate recipes. All I know is big shroom heads with cheese...
Any egg specific?

Seriously though - pizza and side dishes are your friends for this meal. Acorn squash is (are?) also great on the egg.

Thumbs up to the pizza idea, maybe even get an assortment of toppings and just do a homemade pizza that they can make themselves. Acorn squash with brown sugar in the middle for a side

Just to clarify- do you know that they are vegetarian and not vegan? Vegans don't eat cheese (unless it is some plant based vegan cheese).If they are just the "don't anything with a face vegetarians", then I think veggie pizza is the way to go as well. I consider myself quite the carnivore, but I find myself eating veggie pizza quite often.Peppers stuffed with cream cheese and cheddar (like bacon-less ABTs).Grilled Eggplant.Grilled Portabello Mushrooms with feta cheese and balsamic vinegar.Baked apples for dessert!Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

K, I will only go so far. Veggies OK, but vegans or whatever that is. They need to go someplace else. )
Pizza seems to be the most "go to" stuff here and am going to take this suggestion to the higher authorities and see what the board decides. I have been told that no, I cannot eat any meat tonight.
At least we have not discussed about beverages. I will win !

As mentioned above, define "vegetarian." The Vegans are most strict. Will not eat bread made w. eggs or butter. Also not beans cooked w. any animal fat. Etc. etc. Many, including my eldest daughter will eat eggs and cheese. She's called an "ovo-lactarian." We have fun eating spinach quiche.
For Egg'd food, try quesadillas, and let everybody assemble their own. Even a strict vegan can put on sun dried 'maters in oil, 'shrooms, various pestos, a smear of beans mixed w. some EVOO.
Haven't gotten around to grilling tofu, but I suppose it might be OK is well marinaded. Likewise seitan, aka wheat gluten.
Also, something that works really well, even for meat heads. Make root veg packets. Sliced potatoes w. lots of onion and garlic, some bits of carrot and turnip, and lots of oil and salt. Those will brown over a direct lump cook. If the vegetarian will accept it, will be a little better served w. some cheddar.

Treat them to portabella cheese burgers. Marinate with few squirts of Worcestershire sauce - gill side down first, flip and add some good cheese!!

Grill slices of zucchini then wrap them around small slices of brie and put that back on the grill to melt. That's a great vege dish

If you do (did?) the portabellas, try scraping the gills out first, though cooking them gill-side down first might solve the problem. The gills hold an enormous amount of water that just makes anything inside soggy.*******Owner of a large and a beloved mini in Philadelphia

Pig candy....bacon is after all the gateway meat for vegetarians.
How about some baba ghanoush for an appetizer? Roast the eggplant on the egg first.

That's the reason I can't have our vegan friends over. Have no idea what to cook for them. We'd just have to drink and eat salad. You could ask them to bring something to cook, and then Eggify it.
