Pork Pie, A Feast of Ice and Fire

A Feast of Ice and Fire is the official cookbook for the A Song of Ice and Fire novels (and the Game of Thrones series on HBO.)  A lot of the recipes require baking in an oven, but since a Green Egg is essentially an oven that smokes, a lot of those recipes, I think, could be done on an Egg (and probably be a bit more authentic for it.)

The question I have, what additional smoke, if any, should I use for baking a pork pie?  The recipe is as follows:

1 1/2 pounds ground pork
1/2 teaspoon salt
4 egg yolks
2 teaspoons ground ginger
1/4 teaspoon ground black pepper
1/3 cup honey
1/2 cup dried currants
1/2 cup chopped dates
(The dough for the pie crust is a pretty standard pie dough, with a pinch of saffron.)

The pie bakes at 375 for 45 minutes to an hour, at least in a conventional oven.  I haven't tried making the recipe at all yet.
