Pork Pie, A Feast of Ice and Fire
A Feast of Ice and Fire is the official cookbook for the A Song of Ice and Fire novels (and the Game of Thrones series on HBO.) A lot of the recipes require baking in an oven, but since a Green Egg is essentially an oven that smokes, a lot of those recipes, I think, could be done on an Egg (and probably be a bit more authentic for it.)
The question I have, what additional smoke, if any, should I use for baking a pork pie? The recipe is as follows:
1 1/2 pounds ground pork
1/2 teaspoon salt
4 egg yolks
2 teaspoons ground ginger
1/4 teaspoon ground black pepper
1/3 cup honey
1/2 cup dried currants
1/2 cup chopped dates
(The dough for the pie crust is a pretty standard pie dough, with a pinch of saffron.)
The pie bakes at 375 for 45 minutes to an hour, at least in a conventional oven. I haven't tried making the recipe at all yet.

ive done alot of pork pies on the egg, no smoke needed the lump is plenty. never done one like that though, sounds interesting

thats all i would use for a pie with crust, ive smoked some fillings before for chili pie and gumbo pie but not much of a smoke fan on pie crust. most pork pies ive made were either from sausage meat or french pork tourtiere with potatoes
