Boston Butt Guidance

I have a 4# bone in Boston Butt @230-250 indirect on the LBGE. I put it on at 6:15 pm looking to pull it at midnight ish. Plan to eat it for a early lunch tomorrow plans changed after I put it on It is injected with apple juice and cider with Byron's Butt Rub on it. My question is how long can I keep it FTC? Do I need to put it on the refrigerator then warm it up later. Looking for advice and guidance. Thanks in advance.

I did ftc for 3 hrs, but heard of 10hrs, as long as it stays hot.. i do not know danger zone temp, maybe 140? Stike will know. Or google.

+1 with the > 140*F. You may be in luck as there is a good probability that your butt won't be finished and ready to get the FTC treatment til a few hours after mid-night. That said, a good FTC will easily go 6 hours (and some have blindly made it to around12). If you are pushing the comfortable limits-put a remote thermo in the FTC butt and when you get to around 150*F-pull and put in a fridge til time to reheat.

Thanks, I put it in double wrapped foil, adjusted to 220ish and will wake up early to pull. I'm getting to old to stay up this late.

Oh internal temp was 147 with a Thermapen.

a 5 pounder isn't going to keep anywhere near 12 hours. The 12 hour one I did was huge and stuffed with other warm butts in a cooler with tons of towels etc. Anyhow- I think this one is going to have to go in the fridge or you need to slowboat this thing by taking the egg temp down to 200 and hope it's done at 4-5am and you eat lunch at 11. Sleep tight

tthe only problem with that is that it's very difficult to keep a fire going at 200 unless you have a stoker/digiQ type thing. i don't use them but I dont run fires at 200 either.
