Southwestern Soup

Every other week or so, my wife will not know her schedule for coming home.  So, I make that night, "Soup Night".  It will be ready whenever.

Tonight, I made Southwestern Soup.  It's very good.

Simmered with mesquite wood chunks.

    1 lb. Beef, ground
    1 cup Onion , coarsley chopped
    2 cloves Garlic, minced
    1 15 oz. can Pinto beans, rinsed
    1 15 oz. can Kidney beans, rinsed
    1 15 oz. can Black beans, rinsed
    2 15 oz. can Rotel diced tomatoes, undrained
    15 oz. Beef broth
    2 cups Corn, frozen
    1 envelope Taco mix
    ¼ teaspoon Salt
    ¼ teaspoon Pepper
    2 tablespoons Coriander powder
    2 tablespoons Cilantro, fresh chopped
    1 12 oz. bottle Shiner Bock Beer
    2 tablespoons Texas BBQ Rub
    2 teaspoons Penzey's Southwest Seasoning
    1 cup Water
    Brown the beef, garlic and onion in large pan or Dutch oven, stir in above ingredients, bring to boil, then simmer.

    I love corn in my bean soups, but it is not a universally held view here.  I am not familiar with the rub and seasoning.  Was this on the spicy side?

    Yeah... I'm not sure which was nicer the soup or the room... but one could not eat the room I suppose.  :)  Sounds tasty too!

    Great looking soup. Reminds me of Taco Soup, real similar, if I 'member correctly.

    My Father-In-Law has that same picture hanging up at the ranch. Love that second room shot, how you changed the colors, but still kept them in soup. how did you do that?

    @Botch.  Not Hopi.  Headdress is Northern Cheyenne.  Mask is Osage.  Rug is Navajo. Shaman is Texan (Bill Worrell).  Shiner Boch is Texan. Bronze wolf, unknown (bought in Albuquerque)

    @Griffin.  The picture is of Emiliano Zapata, the leader of the Army of the South in the Mexican Revolution of 1910.
    The picture is done in Photoshop.  If you know Photoshop:
    1)Make duplicate layer
    2)Decolorize new layer
    3)Apply sepia tone.
    4)Add layer mask and mask out bowl of soup (bringing back the original layer color).

    Thanks Grif.  That technique is used when you want to draw attention to a certain portion of the picture and yet keep the detail of the rest.  With Zapata's picture, I thought sepia would be appropriate, giving it an aged look.

    How long do you let it simmer?

    I let it simmer with the top off for about an hour to get a little smoke flavor, then I put the top on so I don't lose too much juice. Simmer more until ready to eat - 0 to 3 hours.

    You got quite the setup and your presentations of food should make any restaurant in Paris jealous. Knowing my luck the day I retire wife will leav me, my animals will run off with a pack of other wild animals and I will then keel over.

    Oh well I will live life today and make the best of it.

    Great Great Granfather Circa 1910 or so, East Texas (White Oak to be exact)
