Slap Ya Mama Red Snapper

If you don't live on the Gulf Coast, you might not be able to get Red Snapper. But, I'm sure you have a mild, flaky, white fish wherever you are.




This is a simple, but excellent recipe. I took a basic Paula Dean recipe, de-butterized it a lot, and added a Cajun flair. It's really good.
First, put a chopped onion and a chopped bell pepper at the bottom of a baking dish. Lay the fish filets on top, put pats of butter on it, worchestershire sauce, and Slap Ya Mama Cajun seasoning.

Put it on the egg @400 degrees. Note I have 2 potatoes baking.

Pull after 20 minutes. Sprinkle with panko bread crumbs and parmesan cheese, and put under the broiler for a minute or two. I have not figured out how to simulate a broiler on the egg.

Plate it and make sure you have enough wine.

Eat it with the onions and bell pepper on top, along with a twice baked potato..

I have to get used to the idea that you don't have to have the flame licking your food to impart favor into it. (On my gas grill, if you don't use the flame it tastes like it came from the oven.) I would never think to use a casserole dish with meat sitting on veggies in my egg.I finally took the plunge and bought my large Big Green Easter Egg from Roswell Hardware in Roswell, GA 03/31/2012
