Slap Ya Mama Red Snapper

If you don't live on the Gulf Coast, you might not be able to get Red Snapper.  But, I'm sure you have a mild, flaky, white fish wherever you are.

This is a simple, but excellent recipe.  I took a basic Paula Dean recipe, de-butterized it a lot, and added a Cajun flair.  It's really good.

First, put a chopped onion and a chopped bell pepper at the bottom of a baking dish.  Lay the fish filets on top, put pats of butter on it, worchestershire sauce, and Slap Ya Mama Cajun seasoning.

Put it on the egg @400 degrees.  Note I have 2 potatoes baking.

Pull after 20 minutes.  Sprinkle with panko bread crumbs and parmesan cheese, and put under the broiler for a minute or two.  I have not figured out how to simulate a broiler on the egg.

Plate it and make sure you have enough wine.

Eat it with the onions and bell pepper on top, along with a twice baked potato..
