30# of Butt on for the 4th!

After a huge feast today I just reloaded my egg and got 'er ramped up again for my all night cook of 30lbs of butt (2-8# and 2-7#).
I rubbed the butts with mustard and Memphis Dust I made a couple of weeks ago for some ribs:
As you can see, I'm cooking on 2 levels. I put the 8# butts up top and the 7# on the bottom. I put a drip pan in between them all using my XL Rig.
I'm smoking them with hickory chunks and apple chips with a few Jack Daniels chips just for the heck of it.
I put them on at 8pm after I had my temp stable. Temp dropped to about 75F and has slowly climbed back to a little over 200F at the momen (an hour later). The plan is to eat tomorrow around 2pm.
I'll probably end up ordering my Stoker before the night is over just so I can sleep without worry next go 'round! :laugh:

Do you have the old or new style XL?
I like the rack set up -
I bought my XL back in December and it is the newer style I believe. At least that is what Tom over at Ceramic Grill Store told me when I talked to him and got my XL rig. You should check him out at www.ceramicgrillstore.com
There is no way I would have been able to do this cook without that rig. For the finished cook, check out my post that reads UPDATE...need advice. My butts are currently sitting in my cooler just waiting to be pulled. :cheer: -

I have the old style and that means the lid is shorter than yours..new style is better
I just pulled off two 10 lb butts and a whole 18 lb shoulder after an all night cook
I do a two rack set up but I like the adjustable option you have.
I sure love my Stoker for the all night cooks
After I loaded the Egg, we went to a party and I was able to show some of the people there, how my cook was going, on my iPad -
Sweet. I was looking at the Stoker last night but did not pull the trigger yet. I posted earlier on the fan size needed and the general consensus was that I'm fine with the 5cfm fan (which is like $70 cheaper) even though the recommended one is the 10cfm. Do you have thoughts on that?

I have had my Stoker for about two years and I love it
I have been Qing for many years and the Egg is just a part of my BBQ pit collections
All of my long cooks I do on my Egg using the Stoker...I still use my other pits for different cooking
I have the 5 cfm fan and it works with no problem
