Ohhhh what the heck, there it was in the showcase starin at me. :ohmy: Jaws!!!
Blackened shark, somethin I never had before. This is where a thermapen earns it's keep, right about NOW!
Well this was more like meat than fish. Like pork loin. Blackening seasoning was good with this, glad I went this route. Strange, I suddenly feel aggressive and predatory and I'm snapping my jaws. Look out DianaQ... :evil:

Blackened fish was one of the few things that Chef Paul did that I never could really understand, although Mrs ~t~ does like blackened pork shops. In the old days redfish limits were very relaxed, and I've always thought his recipes were partially responsible for the possession limits changing.Happy Trails~thirdeye~Barbecue is not rocket surgery -

Since March in FLA, we have made a fest trip to MD and NH last week and planning Niagara in August. Maybe there will be one in Wisconsin in our future... :laugh:
