Bend test help..

I have cooked baby back ribs a few time and have yet to have a successful bend test. Today I did CWM's method. 275 (not 375) dome, place setter, spritzed every 45 minutes, bark was awesome! But the ribs just didn't bend. By the time I pulled them, the meat just fell off the bone like a pork shoulder. It did taste awesome though. Another successful conversion for my wife who never 'liked' ribs until today. :laugh:
Rubbed with mustard and Butt Rub seasoning. In the fridge for two days...
Had some apple and cherry chips in the egg:
Hooked up my 'wireless' timer:
Sat back and watched her cook:
Looks fantastic!
No bend :S

The way I look at it, Scott, is that if it's about to fall off the bone, then who cares if it's bendy or not? When it's done, eat it! I never remember to try and bend it--the bone-meat relationship is what matters anyway.Judy in San Diego

smbishop: Nicely done! And no disrespect, but CWM method is from 200-225* and a bump to 250*. They look great, but for CWM standards, they were probably a bit dried out/crispy. Mike (and many others) firmly believe in low and slow for ribs. But hey, if the family enjoyed, that's all that matters!

Some people believe that if the second toe (the one next to the big toe) is longer than the big toe, it meant that person would be the boss of the family. Another popular theory is that people of celtic origins have a longer second toe. Others say that you are descended from Royalty if your second toe is longer.

Didn't read the rest of the thread, but your original post said 375*...BIG difference. You'll get 'em down soon! And when cooked low n slow, the bend test really works!! I think you were just a bit high in temp, and it crisped up the outside a bit more than the 'bend test' allows. Again, as long as everyone enjoyed, Congrats!

The bend test is for a full rack of ribs, not a rack cut in half like shown in your photo I believe.

Scott- ain't nothing in the world wrong with those ribs. That's exactly how I like mine. And I'm convinced that 275 is the perfect temp for cooking ribs. Great looking q!
