made a sofrito sort of thing with carrots onions, celery, garlic, wine and guinness for a braising stock
for those that dont know it, st paddys day started last week in the boston area, some just think its a one day event :laugh:

Fishless, interesting braising stock and the finishing sauce look great. I really like horseradish. Wished you had saved the leftovers for me instead of your dog. :(

there was abunch of other things in the braise, tomato paste, some rosemary, some thyme, not sure it would be classified sofrito, but not being a chef it doesnt matter to me what its called :laugh: the dog would have bit me if i offered it to you, he watched the whole cook, never left the egg for the full 6 hours after seeing all those bones go in.fukahwee maineyou can lead a fish to water but you can not make him drink it

Leprechaun is much tastier slow cooked like ribs, 3-1-1.5, and spritzed regularly with Guinness mixed half and half with unfiltered Liffey water.
Serve on a bed of colcannon, with roasted turnips seasoned with plenty of white pepper.
