Not sure why the cornmeal. I use the paper but not the cornmeal. Before I discovered the ease of the paper used the cornmeal.

Screen OR paper, not both. No corn meal needed with either. Don't roll dough. Shape it by hand to flatten it out a bit. Then grab an edge with both hands, pick it up and let it hang there, moving your hands around the perimeter. Stretches it nicely, though it might not be exactly round.
Place round (or whatever
) on screen or paper and build the pie on that.

Do you have a cookie sheet with no lip or sides? If you do then put parchment paper on the sheet and then roll the dough out on the parchment paper. You can slide the pizza on your stone from the sheet. you can slide the sheet under the pizza once it's cooked.

Forgot a step. Before the "hanging from the edges" thing, pick up the flattened, but still too thick and small, dough round so that it lays across the back of both fists. Stretch it out using your fists (NO fingers please, unless you like holes in the dough). Work your way around, stretching as you go. THEN pick it up by the edges.

I haven't had much luck making my own dough. But then, I haven't tried very hard. I buy dough balls from the grocery store or pizza joint. Still have to shape 'em though. They don't have pre-shaped ones where I work. :laugh:
Btw, I don't much care for screens or parchment, though lots of folks swear by one or the other. Flour or cornstarch on a peel for me. Gotta try some semolina though. I hear it's like ball bearings and that a little goes a long way. No help though, if you don't have a peel.I hate it when I go to the kitchen for food and all I find are ingredients!

Molly I sprinkle corn meal on the peel; make the pie. Slide/shake off to the stone, which I also sprinkle very lightly with corn meal. I used a screen once, and it stuck. Have used parchment too but I personally think it's more work than just the corn meal.

I used a cookie sheet last night with corn meal, worked like a charm. Then went and bought a cheap peel at Target this morning, about 10 bucks.Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories.
