I was in the mood for some Jack and found a peameal roast in the freezer and it turned out great. After marinating the roast with a cup of Jack and a cup of water for a couple hours in the fridge I basted with a Maple Jack sauce made of the following ingredients.
1/2 cup maple syrup
1/4 cup honey
1/4 cup Jack Daniels
1/4 cup grain mustard
1 tbl spoon prepared yellow mustard
2 cloves garlic minced
2 tsp chopped fresh sage
salt and fresh ground pepper to taste
I heated the above ingredients mixing well then let cool.
I set my BGE at 250 and basted every 20mins or so and pulled when it reached 160 internally which took about 3hrs. I also added 3 chunks of applewood that added a very nice smoke flavour. end products was very juicy and very yummy.

Oh Steve i would love to if you share some of your secrets.

Looks tasty. I've heard of peameal but never tried it. I don't think we have it around here. I like the cheese on the veggies too!
-
Costco sells a wide variety of sizes up here and makes for a great treat or dinner.

Yum! It looks sooo good! The Jack Daniel's and maple syrup and mustard kicks it up, yours looks so juicy and perfect... I am totally jealous.
Peameal bacon was my favorite thing to eat while in Canada. I wish customs would let us bring it across the border, I would have filled my luggage with it when I went to Niagara Fest.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Faith,
You can take cryovaced pork legally. It's the only meat that is open.

Hey Paul
This is Canadian bacon Jacked up. -
Paul,
It's what we call back bacon. Cured pork loin rolled in cornmeal. No smoke nothing. We have no idea what Canadian bacon is.

Molly, Faith... I haven't tried this place but it is a US company in Troy Michigan which imports and ships peameal in the US. Maybe I'll give it a whirl.
