Cornish Hens with orange glaze

Did a reduction of orange juice, triple sec, chicken broth, marmalade, garlic and ginger and cooked to a glaze
Did the hens on a raised grid.
Started glazing when meat got to 150*
Cooked to 165*
Seved with green onion rissoto and steamed broccoli

I LOVE spatched hens!!! Never tried them with a glaze though - and that one looks and sounds TERRIFIC!!! Nice work, Steven!

I bought some for this weekend also. My friend and I did a big cook with 12 of those with different rubs. one she had done was orange marmalade and horseradish. (I don't like orange marmalade) I gotta say those 2 flavors together are fantastic. Try it some time.Molly
