First Pizza's tonight

The wife has given me the green light to purchase a pizza stone, and peel today on the way home for our first ever round of pizza on the egg! My local grocer (Wegmans) sells stones, peels, pre-made dough and all the other trimmings as well. For the first round I will use their dough to make it easier. What else should I be doing? I see some folks using parchment paper... do you put oil or anything on there before putting the dough down? Do you cook it right on the egg with the parchment paper, and do you remove the paper at all during the cook or leave it on the whole time? My wife has stated in the past that she is not a huge fan of having the corn meal on the bottom and getting it all over her hands. Figure the parchment paper might be the way to go.

You'll get a lot of opinions as to the best way. If I was you I would search "pizza" and there are tons of post about pizza. Good luck

I just did my first pizza last night as well. I used pizza screens to "get them" to the stone.After about 3 minutes or so I removed the pizza from the screen and let them finish on the stone. Worked out fine for me.Dave San Jose, CA The Duke of Loney

Smart idea to use the store bought pizza dough for your first one. Parchment paper works great and you put it right on the stone and keep it on the entire time. Watch out though it's slippery, I almost lost a pizza off the peel a few times.:)

Using parchment & a peel would be redundant, as the reason for each is to transfer pie to & from the Egg/Stone. I prefer the screen/pan method instead, removing it mid cook.

Ron there is nothing redundant about using a peel with the parchment paper. The reason to use the paper is so the dough won't stick to the peel. -RP

Ok, my bad. Still seems a little "busy" to me when a screen does it all. Just my opinion.

Whacky, I used a peel with a little flour on it seemed to work out great, I also did a 3 minut pre cook on the dough so it would be easier to move around with the toppings. Crust wound up nice and crispy.

My first few pizza's I used corn meal. kind of messy and not as easy. I now use parchment paper. I build the pie on it, slide it on the stone and remove it after a few minutes. Good Luck.
