BBQ with a few sides. Catering. I am toying with the idea of having a private dining area for 2 people. With a personal chef and a very private menu.

That's so great, buddy!! I know you'll make a success out of and I'm also glad to hear that you'll still make it to OKC. Who else would I mess with if you didn't make it.
By the way, the menu wouldn't be complete without a Big Daddy special...just have to figure out what I would put on it without making it a "man vs. food" size dish. Half a rack of ribs, chicken thigh, apple pie baked beans, and a roll??
May have a career change in my future and that will free me up to come "guest cook" for a day! lol

I have been talking to a few people off line for about a month. The timing and investment is right. Went to the closest comp, today. Dang they are high. 4 ribs, 1 chicken breast, cole slaw and fries. $13.00. Thanks Jeff.

Mike, is there a reason you're going with a pellet burner as opposed to a wood or charcoal unit? Is it ease of use?

That is the main reason. I lot of competitors use an FEC on the KCBS curcuit.

Having done some research since I posted my question, I can definitely see that, including the Grand Champion of this year's American Royal Invitational. I saw a few Youtube vids of him talking about the FEC, and he sounded just like the gurus of Statistical Process Control we used to listen to in the 1980s and '90s - it's all about eliminating variables so you can concentrate on what counts.
