Old Timer's help, please?

Good morning all!

Civilization has pushed me out to the land of dial-up, so I haven't posted here for several years.

Perhaps one of our "old timers" could help me with a recipe that has not been archived since the new forum.

I'm looking for an enchilada recipe that was first posted in 2000-2002. I find reference to it on several searches, but the link brings up an error display.

I'm sorry I don't know the OP, but maybe some of our great cooks could help me out?

    See if this is it:
    Pulled Pork Enchiladas

    This is a wonderful pulled-pork recipe to use in case you have company coming over. It serves 6, and you won't believe the requests for the recipe.


    Ingredients:
    2 cups onion -- chopped
    1/2 cup of butter or margarine
    4 cups of pulled pork -- finely shredded
    1 19 oz can Old El Paso Enchilada Sauce (Mild or Hot)
    2 cups of sour cream -- dairy
    4 cups cheese -- shredded (4-cheese Mexican blend or Monterrey Jack)
    1 4 oz can can of green chiles -- diced
    1 4 oz can can of pimentos -- diced
    10 tortillas -- flour (8 in.)

    Cooking Directions:
    1 Saute the onion in butter until tender, and lower the heat.
    2 Stir in ¾'s of the can of enchilada sauce, and 2 cups of the shredded cheese until melted.
    3 Add in the pulled pork, green chiles, and pimento, and mix well.
    Special Instructions:
    1 Take the remaining enchilada sauce and mix with the 2 cups of sour cream.
    2 Pour a portion of the sour cream/sauce mixture into the bottom of a 13x9-inch baking dish, and spread evenly.
    3 Fill each tortilla with equal portions of the pork mixture, and roll up.
    4 Arrange in the baking dish, and spoon remaining sour cream sauce over the enchiladas.
    5 Sprinkle with the remaining cheese.
    6 Bake in a pre-heated 350'F. oven 30 minutes, or until bubbly.
    7 (Serve with additional sour cream if desired)

    Servings: 1
