Dome temp of 250* will be easier for you.
Two hours per pound is a guideline, may take less, may take more. I shoot for the long side, it will hold several hours wrapped in a cooler with no problems. -
You should cook it indirect at 235* with fat side up till internal temperature is 190* This might take eight to ten hours but don't open the dome to peek.let your thermometer tell you what is going on.Just do not cook it past 200*.
