I'm doing 4 fatties for work pitch in tomorrow. Do I serve this on a ritz or biscuits or what??[p]Four Flavor Fatties are:
Ragin River
Firewalk (using hot sausage too ... this one should be smokin hot)
Swamp Venom
&
Pork Perfection (my rub)[p]250 indirect with a hint of smoke right??[p]

    Smoked Signals,[p]Biscuits work great. You don't have to worry about being light on the smoke, store bought fatties are very dense. I usually do them when I'm barbecuing ribs or a butt and they come out fine.[p]~thirdeye~

    Just yesterday while doing a butt I did 5 1# rolls of farmland regular sausage with KC Barbeque rub, celery seed and mustard seed to internal of 170 then cooled sliced and froze in a freezer bag for Christmas morning after a sample of course
