I'm having a pig raised for me for the first time (we'll call him Wilber). Does anyone have any suggestions on how to have him sliced and diced. The only thing I'd really like is to have the shoulder complete. I've had great luck with the but and picnic, I can just imagine the flavor of the two combined. I'm picking up Wilber the weekend after I get home from the EGGFEST. Any help from the forum would be great.Thanks again. Charlie
