Pinchos Morunos is a simple Spanish marinade for cubes of pork loin (salted overnight and marinated for 2 hours); yesterday one of the cooking shows did an over-the-top grilled cornbread that I wanted to try too.
Cornbread started with grilled jalapeños and corn, fresh corn wasn't yet available so I grilled canned.

Recipe called for sour cream and milk and melted butter and oil and two eggs and 2 cups of cheddar, kinda rich. Corn and peppers stirred in, CI heated (I toasted the cornmeal in it first), buttered, and mix poured in.

Checked it at 20 minutes, not quite there, 10 more and it looked good, crust was just about right.

Kebab marinade had garlic, saffron (I was out, omitted), oregano, salt, sweet and hot smoked paprikas, cumin, tumeric, cinnamon, black pepper, lemon juice and olive oil. About 5 minutes per side:

Enough pork for 3 meals, enough cornbread for six.

Marinade is a keeper; the cornbread was good but not really "cornbread", just too much going on and it was heavy. TFL!

That all looks great. Would've been over the top if you had gotten crosshatch grill marks on the corn.

That looks phenomenal. I need to do a cornbread with some chilies. I bet that pork would be amazing with a tortilla and a little salsa.Las Vegas, NV

My cousin makes a Mexican cornbread. She starts by putting a layer of bacon in a cast iron skillet. The batter has corn , jalapeños, and cheese added.
