Restaurant Egg (Part 4) - Cornish Game Hens

I kept poking Chef Timmy when he said the next thing he wants to try are Cornish Game Hens, that he needed to call them, “Smoked Baby Chickens” on the menu, but he didn’t take the bait. But, he did do a nice job on the cook and plating. 18 CGH’s for the Friday Saturday menu and they sold out both days. Didn’t get many pics of the cook, but here you go.

    Nicely done.  The opening photo is definitely magazine quality.  Beautiful!
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
