Last night our neighbors hired a chef, to celebrate our retirement, teaching us how to make dumplings. 

It was so much fun and the end results were very much ornamental to a delicious filling. We learned so much. 

The filling was pork, shrimp, ginger, scallions, mushrooms, water chestnut all mixed together then wok fried after a quick boil.

My Beautiful Wife did marvelous, and it was an experience that I and Suzy thoroughly enjoyed. 
I served a very nice Sauvignon Blanc to go with the meal and luckily it checked all the boxes. 

I will do this again, and will do it on the egg.🥚 

last night when we got in I took a pork butt out of the brine, patted it dry, and added a very spicy rub, then covered it with peach preserves, put it on the egg indirect at 225°F. 

It is doing all right.

    Great way to kick off the "every day is Saturday" lifestyle.  Such fun to learn something new.

    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Yeah, Senator McConnell was not here, I did not know where he was and I later learned that he was busy falling down in DC. It was ok, because he did not know where he was either. 

    The only time I know he is home is when the security rolls in. That has become less often. 

    Thank you for the congratulations, hoping we can hook up again in the not so distant future.

    It is difficult not to plan for the weekend anymore, and thank whoever it is that invented cheap watches that tell you date and time, notifications, and what a loser I am for not getting in my miles per day.

    Thank you for the kindness, however, Suzy turned out to be the dumpling chef for our house. I will prepare the stuffing, she will build and fold. She was very good at it, so I stepped back…

    It was fun. The guy with his back to everyone at the counter is a sommelier and does the best bourbon tour in Kentucky. He is always busy and was late getting to the party. My gosh, if there is a funnier guy on the planet I want to meet them. The couple that hosted the party are among my most favorite people, ever. Cool folks, that I am fortunate to hang with.

    It was sensory overload. I hope to be doing them soon. We are heading out going to see Suzy’s brother, down in North Carolina. But when. Get back, we are doing dumplings. 🥟
