Meatloaf, bread and grilled courgette and halloumi salad with caper and lemon dressing

An offering to the forum gods via this stand-alone.

The meatloaf recipe was from Michael Smith and featured lean ground beef and lentils. 

Bread was an “English muffin bread” made by my wife.

Served with a side of in-house ghost pepper sauce. 

Neighbour graciously provided the zucchini, tomato and peppers. He drops off baskets of fresh veggies unexpectedly several times a week (“better to be lucky than good”).

    Way to post this up.  That is quite the documented banquet.  Great eats right there.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

    Interestingly, that was chia seeds that were soaked in water to create a sort of “gel”, which was then incorporated back into the meat mixture.

    Forgot to address your other question. My post was misleading. The first loaf pictured is the “real bread” from Michael Smith. We didn’t try it yet. The second bread featured was the English muffin bread - as the name suggests, like a cross between a plain white bread and an English muffin.

    In one of the (many!) BBQ stopovers in my trip to Virginia and North Carolina I tried a super delicious smoked meatloaf sandwich.
    Wonder if its worth trying on the Egg. Yours looks great

    Thanks. My wife is a sandwich addict. I think the highlight of me making meatloaf was the sandwiches she could make thereafter.

    I’m case it’s of interest, this is the recipe I used. Very pleased with the results. Did it in the oven, but as you know, no problem to cook on the Egg! I have done many meatloafs on the Egg in the past.

    Really nice meal. 
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    coincidentally, I ran across Smith "Wood, Smoke & Fire" at a local bookstore yesterday. Thumbed though it - looks fantastic with lots of vegetarian and lots of egg friendly recipes.

    Should have picked it up. Had a Scottish moment.
