Pulled Pork

I cut a boneless pork butt into quarters because it was too large and we wouldn’t be able to eat it all and we are horrible at eating frozen left overs. The other two quarters were vac sealed and frozen for the future. 

The one quarter opened up into a long strip that was about as thick as a pork steak. I was tempted to try cooking it like that but I ended up rolling it back up and tying it. 

I seasoned with Meat Church Honey Hog about an hour before they went on the egg. I smoked them with pecan chunks between 275-285. They cooked for about 5.5 hours, not spritz or wrap as I was on calls all day so they just rode it out. I pulled them at about 204 and let them rest for about 2hrs before pulling them.  Very tender, juicy and a nice smoke ring.

    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

BTW what really works best is just smile when you get the accolades, but NEVER tell them your trick as for some reason people get a strange idea since they don't understand the magic that Coca-Cola performed!

    Here in the west the markets offer both US-made Coke (with "sweeteners") and Mexican Coke (well, they did) with actual sugar; wonder if there's a noticable difference there.

    While I’ve never reheated pulled pork with it, there is a significant difference in Carnitas using US made Coke and Actual Sugar Mexican coke with browning

    That’s a great tip @RRP that I’ll try. I’ll get the natural sugar coke from Costco for that experiment.
