A rib roast BGE cook-just because... (and a standalone thread to support)

WTF-a rib roast cook in June-I was freezer diving a few weeks ago and came across a 7+ LB rib roast that had been hiding for a few years. Decided to perform a liberating intervention-(aim was Father's Day (FD) just because). FD got audibilized by local married son with 3 grands. Cooked today:
I cut the bones and they stay with me-only cook pic is the bones (life happens):

And the $$ shot-

250*F for around 2.5 hours (quick cow). Seasoned with fresh ground pepper and chopped Rosemary.
