Likely not worthy of a standalone thread, but I recently served some of these to a fellow kamado/cooking enthusiast and they set to work on replicating the recipe.

Love them and they do deserve their own thread. They sell them at a boutique deli I just visited. Also, at a pig roast a couple years ago, they were branded as "Cowboy Candy."

Thanks. I have not yet tasted the results of this batch, but I have to admit that I munched on more than a few jalas while slicing.I’ve heard of “cowboy candy”, but I can’t say I recall that they referenced these. Good to know the lingo. Thanks! -

Looks good! I made cowboy candy long time ago, have to check out your recipe. Years ago, @TexanOfTheNorth cranked out a batch with professional looking label and distributed to all eggheads at the local eggfest. Few years ago @caliking brought us a generous care pack that included a jar of Texas candied jalapenos, loved it!

I make 10 lbs of jalapenos into these all the time.
Last time i diced up some pineapple and jarred up with the left over syrup. -

1) make sure it's completely cooled, even lukewarm is bad
2) leave plenty of head space
3) watch like a hawk and press manual STOP if/when you see liquid bubbling towards the seal bar before the cycle is over.
Edit: Chamber sealing doesn't sterilise it, so it still needs to be refrigerated?canuckland -
Went for triple with some tweaking... 2.5x marinade for 3x jalapeno, ratio turned out perfect with very little leftover liquid (for salad dressing!).
One jar for immediate consumption, five jars canned in water bath. I could have chamber sealed all of them (nod @CTMike) but I don't have enough fridge real estate.
Did I say immediate? Should have made at least 5x.

Wife found some Jalapeno plants that were bred intentionally to be hotter than normal, kind of the opposite of the Texas A&M variety that was bred to be milder. We have a few plants in the ground, hopefully we'll have a good crop, they would be good for this.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Nice! Grocery store jalapeños are so mild I’ve started using serranos if I want a little heat.
