Berkshire pig Half Hog Haul

Ordered half a Berkshire pig from a local farmer. First look at it out of the vacuum seal packs. Simple grill on the Weber for today. SPG along with some homefries. I'll let y'all know my thoughts along with the after pics.

We raised some berks. The meat was outstanding, the sausage was a little fatty but that was my fault trying to schedule all the pigs for butcher at once.

Great eat. Cooked them about 15 mins right to 145. Definitely worth it in my opinion. @lkapigian I was a bit busy last week and heading home next week, but I'll throw up the break down when I get back. Short details were $6.60 a lb hanging weight, which was 89lb. A little light according to the farmer. Supposedly get 60% cut weight from that.
@alaskanassasin didn't get much sausage. Wife and SIL wanted the hams so I ended up with about 2lbs of ground pork.

They don’t usually grind the hams into sausage, I would think you would have more than 2lbs.South of Columbus, Ohio.

I too opted for shoulders and in hindsight I would have ground the them into sausage simply because sausage lasts so much longer (rather than one meal +-) and is more expensive than a shoulder if that makes sense but you really can’t go wrong. I used my shoulders to make charcuterie but sausage is what I will do next time.South of Columbus, Ohio.

very nice. Makes me miss the hog raising venture a few of us TX eggheads dove into some years ago. It was the best pork I've ever eaten. Period.
