Huckleberry glazed baby back ribs smoked over peach

I've cooked mutton with a huckleberry glaze in the past and really liked it. We bought back some more huckleberry sauce and jam from our latest excursion to t'other side of pond, so I decided to apply the glaze to some meaty baby back ribs. I smoked these over peach wood during the 2-2-1 cook to add some more fruit flavour in. The glaze recipe is the same as in the mutton blog post:

https://thecooksdigest.co.uk/2018/03/27/mutton-leg-with-huckleberry-glaze/

although this time I didn't add any BBQ rub. I did however sprinkle a little demerara sugar onto the ribs just before they went in for the first phase of the cook. End result? They were absolutely fantastic, served with shredded red cabbage cooked with cinnamon.

Just before wrapping after smoking for 2 hours:

The glaze ready to be applied in the last hour of the cook:

Second glaze application, reduced the glaze to improve the consistency:

Thanks for looking!

Huckleberry anything always gets my attention.  What a great idea for ribs, they look fabulous.

Thanks folks. When I do this again, I'll add a bit of honey into the glaze, other than that very happy with the result.

@kl8ton I cook pizza at 400C/715F. That's the cleaning process. Pretty much all grease and detritus burns off. I then rub the grid with a cloth.

    Damn dude,

Another amazing cook that I'll have to try. Next time my wife and I come across the pond maybe I'll crash your dinner party. :)
