Probably going to Sous vide, then sear in a hot oven or torch it. Two questions… ATK sears, Sous vide, then sear again. Why the initial sear? Also, anyone slow smoke, then Sous vide, then sear? If so, what temp and time is safe to do?

Master C…thank you! Did you set the SV at 131? If so, how long was it in the bath? The stuff I’m reading is all over the board. I’ve read 6 hours, 24 hours, 18 hours and just about anything in between. I know it’s not weight, but the thickness that really matters, but the variance in suggested times is incredible.
